Wow, I can’t believe the challenge is coming to a close today. Has it really already been 10 days? I could seriously talk about strawberry delights for the rest of the year. Who knows if this will make a return but for now our 10th entry into the Strawberry Delight Challenge’s feature is the Strawberry Banana Nutella Crepe.
In America, we feel so fancy ordering crepes at our local Pancake House or at a sidewalk french cafe. Across the pond, this is street food or something that you can buy at a kiosk at the mall. In England, they even have a day devoted to it, and they refer to them as pancakes rather than crepes. Either way, they are such a fun and satisfying treat – or even a meal for everyone to enjoy. Breakfast, lunch or dinner, there are no boundaries regarding when it’s appropriate to have them. Go on, have them for dessert even.
Recipe is included, and once again feel free to adapt to your taste including substituting the vanilla extract with cinnamon based on the time of year they are made. I swore I wouldn’t talk about Nutella because it just became so saturated, but I had to especially here!
1 cup All-Purpose flour
2 Tbsp sugar
1/8 tsp vanilla extract
1/4 tsp salt
3 large eggs
1 cup organic milk
2 cups strawberries, sliced
1 banana, sliced
2 tsp sugar
4 Tbsp Nutella, warmed
Place the first 6 ingredients into a blender (Magic Bullet), and blend until smooth – about a minute.
In a non-stick skillet, preheat stove on medium heat and spray with the nonstick cooking spray.
Scoop the batter into the pan using an ice cream scoop.
Tilt the pan in a circular motion coating the surface evenly.
The crepes take about 30 seconds each side to cook.
Heat Nutella. I use my stove, some might prefer a microwave.
Place nutella, strawberries and bananas inside of the crepe, fold and top with whipped cream, drizzle with nutella and garnish with the rest of your strawberries. Sprinkle powdered sugar on top (optional).
