Day #3 – 10-Day Strawberry Delight Challenge – Strawberry Shortcake

StrawberryShortcakeMasonJarDay #3 of the challenge kicks off and it’s really getting fun talking about strawberries. As the days unfold, and with only 10 to choose from, how does one narrow it down exactly? How did Cameron Crowe decide on which order sequence to put the records in when making the movie Almost Famous?  ……… The answer is, go with the favs!

To that end, the strawberry shortcake is just such a classic, so much so that it can’t be ignored. It was Strawberry Shortcakemy grandfather’s birthday cake choice. When I was a kid, I dressed up like Strawberry Shortcake because who was cooler than her?

There are several variations of the Strawberry Shortcake that almost everyone can enjoy from classics to vegan, gluten-free, and everything in between.

Today’s feature is on a local farmers’ market in Miami, FL that has accolades to support being one of the best variations of the treat available.

Burr’s Berry Farm Famous Strawberry Shortcake Day #3 – 10-Day Strawberry Delight Challenge

Good God, this thing is packed high with tons of strawberry goodness. Plus, you are supporting the local guy in the process. Hey, once upon a time, they were all ‘local guys’ that little by little were consolidated into the ‘big guy.’ My mother used to take my brother and I to the local farmers’ market on Coconut Creek Parkway around the corner from our house back in the day to pick strawberries. You had to be there back in the erm 70’s because that farm has long been gone and is filled with concrete. There’s something to be said about the hard work that you put into selecting your own fruit and what better way to celebrate your success than with a glorious delight like this afterwards?!? There are only small pockets of this still available in South Florida. Go on, enjoy it while it lasts!!!

The Strawberry Shortcake is even easy to make at home. Here’s an easy to make classic recipe from Betty Crocker, and there are also recipes for Gluten-Free and Vegan that are equally as good.

1 quart (4 cups) strawberries, sliced

1 quart (4 cups) strawberries, sliced

1/4 cup sugar

2 1/3 cups Original Bisquick™ mix

1/2 cup milk

3 tablespoons sugar

3 tablespoons butter or margarine, melted

1/2 cup whipping cream

  • Heat oven to 425°F. In large bowl, mix strawberries and 1/4 cup sugar; set aside.
  • In medium bowl, stir Bisquick mix, milk, 3 tablespoons sugar and the butter until soft dough forms. On ungreased cookie sheet, drop dough by 6 spoonfuls.
  • Bake 10 to 12 minutes or until golden brown. Meanwhile, in small bowl, beat whipping cream with electric mixer on high speed until soft peaks form.
  • Split warm shortcakes; fill and top with strawberries and whipped cream.
